So many yummy things -- I'll get right to it.


Banana Cake with Nutella frosting -- hot diggity damn it fantastic.  I made myself sick on that icing.

Sriracha Chicken -- I used breasts, one pan (stove top only) and marinated for three days (because I'm lazy, not for any technical purpose, and they turned out phenomenal.  Paired with Cheesy Cauliflower  (subbed rice milk and parmesan) and Green Beans to create a memorable dinner last Sunday.  Mark got seconds, which equals a winner in our house.

 Had a Sweet Spinach Smoothie for breakfast this am. Filling, but jury is still out if I "love" it.


Cincinnati Chili -- lots of flavor. Loads.


Cottage Cheese Pancakes -- not a fan of cottage cheese, LOVE these pancakes


Browned Butter Chocolate Chip Cookies (subbed maple syrup from molasses and pre-toasted pecans in the oven then cooled before adding to batter, did not add finishing salt) -- failed to read the recipe through, so the waiting period was unwelcome, but it is what it is.

Flourless Fudge Cookies -- another episode of "Marcia doesn't read instructions" so cookies turned into a pan of brownies. Still delicious, could have cooked through a bit longer.  A tad too gooey for me, next time I'll cook longer and see if that helps.


Summer Cake -- made twice, crazy easy and super yummy. 

Pick Me Up Smoothie -- yummy and refreshing.  Will make again and again.

Crock Pot Taco Chili - silly easy to make,crock pot for the win!


 Tracy Anderson Chili 
3 - 10 oz servings


1 1/2lbs ground turkey
3 cups Chopped Fresh Tomatos
1/2 Jalapeño, minced
1 large Zucchini, diced
1 Red Bell Pepper, diced
3 tbsp roasted garlic, minced
3 tbsp cumin
2 tbsp paprika
Cayenne Pepper, to taste


Spray pan with cooking spray, add garlic. Saute and add zucchini. Cook for about 3 minutes then add bell pepper and jalapeño -- sautee until tender.  Add ground turkey, combine all ingredients, stirring constantly. Add cumin and paprika. After meat is completely cooked, add tomatoes, and simmer for 20 minutes.



Banana-Oat Energy Bars - via runners world
303 calories a bar

3/4 cup chopped Walnuts
2 Overripe Bananas
1/2 cup Vegetable Oil
1 cup Sugar
1/2 tsp Vanilla Extract
1 1/2 cup Old Fashioned Rolled Oats
3/4 cup Flour (can substitute up to 1/2 cup Whole Wheat Flour)
3/4 tsp Baking Powder
1/2 tsp Salt
1/2 tsp Cinnamon
1/2 tsp Nutmeg
1/4 tsp Baking Soda
3/4 cup Dried Cranberries

Pre heat the oven to 350. Coat a baking sheet with cooking spray.

Spread walnuts on ungreased baking sheet and toast in oven for 5 to 8 minutes

Mash bananas in mixing bowl. Add oil, sugar, and vanilla extract. Mix till smooth

In a separate bowl combine oats, flour, baking powder, salt, cinnamon, nutmeg, and baking soda. Add the banana mixture and stir till just combined. Fold in walnuts and cranberries careful.

Pour mixture into pan and spread evenly. Bake for 25 to 30 minutes or until golden brown.



French Toast (original post, here) -- I've subbed eggnog for milk, holy smokes. Try it.

  1. BAHAHAHA - my chicken often marinates for a few days, too. Because I'm seriously too lazy to do anything with it. Pretty sure Scott would die and go to heaven with the Sriracha Chicken…
