Maple Apple Upside Down Cake, via Homemade Decadence

(apples)
2 medium Fuji Apples, peeled, cored, and sliced into wedges
1/2 Cup Pure Maple Syrup
4 TBSP Unsalted Butter
1/2 Cup firmly packed Light Brown Sugar
1/4 TSP ground Cinnamon
1/4 TSP grated Nutmeg

(cake)
1 1/2 Cups all purpose Flour
1 TSP Baking Soda
1 TSP ground Cinnamon
1/2 TSP freshly grated Nutmeg
1/2 TSP ground Ginger
1/2 TSP Salt
3/4 Cup Unsalted Butter, melted and cooled
2 large Eggs
1/4 Cup Pure Maple Syrup
3/4 Cup packed Light Brown Sugar
1 Fuji Apple, peeled, cored, and grated

Preheat oven to 350F and grease an 9 x 2 round baking dish with butter

Arrange apple wedges in bottom of prepared baking dish in a circle
In a medium sauce pan (medium-low heat) combine maple syrup, 4 tablespoons of butter, brown sugar, cinnamon, nutmeg. Heat until butter melts and begins to simmer (about 4 minutes). Remove pan from heat. Pour half of syrup over apples in baking dish, reserving other half for after cake is baked.

In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, ginger, and salt
In a separate bowl, combine melted butter, eggs, maple syrup, brown sugar, and grated apple. Add apple mixture to flour mixture and stir well. Dollop batter onto apples in baking dish and gently smooth top.
Bake until toothpick comes out clean (40-50 minutes). Let cool for 5 minutes. Run a knife along edges of ckae to loosen before inverting onto a serving plate. Drizzle with reserved syrup and let cool slightly before serving.
